Ingredients

  • 4 bone-in chicken thighs (skin on)
  • 1 small green cabbage, cut into wedges
  • 3 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp caraway seeds (optional)
  • Salt and black pepper
  • Lemon wedges for serving

Instructions

  1. Preheat oven to 425°F (220°C). Line a large sheet pan.
  2. Toss cabbage wedges with 1 tbsp oil, salt, and pepper. Arrange on pan.
  3. Pat thighs dry. Rub with remaining oil, paprika, garlic powder, salt, and pepper.
  4. Nestle thighs among cabbage. Roast 32–38 minutes until skin is crisp and 165°F internal.
  5. Rest 5 minutes. Serve with lemon and pan juices.
